HOLIDAYS! Finally.



     Is coming to town J

11 more days to go and its 2010 CHRISTmas Celebration already! And exactly 5 more days and we’ll be at NAIA Terminal 2 to wait for mom’s arrival in time for Holiday vacay J

Finally, after waiting for more than a decade…. A CHRISTmas celebration with my complete family. GOD and BRO gave me the best CHRISTmas gift ever!

With Honors

I can't help but post this because two of my fave kids in the world was one of the top notch in their respective classes last school year. I was'nt able to attend to their Recognition Day but I am happy for them. well, who isn't if they bragging 2nd honor medals! :-)

Can't believe she grows up so fast! :-)

The Secret Reveal

 
Although mom was already in Japan as i wrote it, i still wanted to write about this whole secret thingy :-)
it was so cool and funny! 

Mom planned her summer vacation since december of last year. She said she needs my cooperation to never tell anybody especially my brother and my grand mudra. She wanted to surprise them all. So i was game with that, but lo and behold, came last few weeks of March, my brother already knew it because his wife's tita who happened to be my mom's kumare came home from japan and told them about mom's arrival on April 1 but i was still mum about it and i never mentioned anything.

April 1 - Mom arrived around 10:00pm after she place her luggages in her room, she went straight to my Lola's house and knocked, my lola being 'safety first fanatic' opened only her window and mom greeted the still sleepy folk and said in the window "Hello Nay!" and my Lola's reaction was "what? who's there? what? Oh! (with wide eyes) why you're here? is something wrong?" hahahahaha! so funny even my nephew said "Hello Nay!" the same tone my mom used.

Also, last April 6 Kuya We, mom's cousin who works in Bahrain as Architect and his wife Ate Eva also working in Japan took their vacation and stayed in our house. It is one great summer indeed.

a very simple V-Day with Mahal Ko

He wanted to celebrate V-Day and Chinese New Year last Feb 14 but i don't want to go out that day but i asked him if he wanted to go out, why not the usual movie date na lang but this time, with come-back movie nila Popoy and Basha :-) He said okay but he also points out na Miss You Like Crazy's showing date is a bit later pa ng Feb but i said, i don't wanna have double celebrations pa kasi it means double gastos din :-)

Oh, by the way, i said no need to buy me anything kasi that movie date is OK na for me, happy na ako na he agreed, but he still bought me flowers and a Mr. Donuts with freebies like heart-shape baloons and stuff toy (talks about cheapskate!) hahaha! but he also bought some foods we can share sa house as a "dinner date". But nevertheless, i trully appreciate the effort, brings more kilig pa nga.

Delightful Carbonara topped with slice ham and bacon bits ~Recipes #2~


Carbonara (usually spaghetti, but also fettuccine, rigatoni or bucatini) is an Italian pasta dish based on eggs, pecorino romano, guanciale, and black pepper. The dish was created in the middle of the 20th century.

I love pasta! and i love its different sauces too! from Alfredo, to Meatballs, to Pesto, and the seafoods :-) I first tasted Carbonara during High School days at Sbarro Festival Mall in Alabang. Its not my fave pasta dish but since its the easiest to prepare, i give it a try. However, my Carbonara doesn't have eggs.  It was a combination of different recipes i learned from the net.



Ingredients

500 grams.     Spaghetti or Fettuccine Pasta
                          (with this recipe i used the latter)
                          I'm using San Remo for my pasta dishes
200 grams      bacon
200 grams      cooked ham
½ cup              butter
1 tsp                 dried basil leaves
½ tsp               dried rosemary
1 pc                   chicken bouillon cube
1 small can      of slice mushrooms
2 cups              of heavy cream (you can use Nestle all-purpose cream)
1 cup                cream of mushroom (the best is Campbell )
1 cup                water
½ cup              quickmelt cheese, grated
                         Parmesan cheese
                         Salt and Pepper to taste


Cooking Procedures

Cook the spaghetti or fettuccine according to package directions. Drain and you can rinse in cold or running water. Transfer to a serving bowl

Step 1: Cook bacon in a skillet over medium-high heat without oil. When the bacon starts to render oil, turn up the heat to high and continue cooking until the edges start to brown (you can cook until crisp). Pour off the bacon fat. When the bacon is cooled, scrumble it into bits of pieces

Step 2: In the same pan, cook the ham for about 1 minute on both sides at medium fire. Set aside. When already cooled, slice it accodring to your preperence.

Step 3: In the same pan, put the butter until melted and add the mushrooms, ham, basil, rosemary. Add the water from the mushroom and bouillon cubes. Add the cream and let it simmer while stirring occasionally. Add the cream of mushroom, water, cheese, and bacon. Add more water until you achieve the desired consistency. Add salt and pepper to taste and stir a lil bit more.

Step 4: Toss with the pasta and sprinkle with lots of Parmesan cheese.

                makes 6 servings


COOKING TIPS!  Please note that before you add some pepper and salt, make sure you already tasted your sauce because the bacon and ham already has a salty flavor.


 You can serve it plain just like this


 


Or with lots of Parmesan Cheese!

Tonkatsu ala KC ~Recipes #1~


Tonkatsu is a very popular Japanese food. According to Wikipedia, it was invented in the late 19th century. It consists of a breaded, deep-fried pork cutlet one to two centimeters thick and sliced into bite-sized pieces, generally served with shredded cabbage and/or miso soup. Either a pork fillet (ヒレ, hire) or pork loin (ロース, rōsu) cut may be used; the meat is usually salted, peppered, dredged lightly in flour, dipped into beaten egg and then coated with panko (breadcrumbs) before being deep fried.

My mom is living and working in the land of the rising sun for almost 24 years already. Every time she comes home, there's always a pasalubong that includes Japanese foods that's why one of my fave dishes is Japanese and Tonkatsu is my 2nd Japanese fave food (Tempura being #1 :-D)


This recipe was posted on my former blog that i deleted already but you can still read the original post to my multiply account.

Here's my very own version of TONKATSU. Itadakimas!


Ingredients:

1 or 1/2 kilo boneless pork chop
salt and pepper to taste
flour/cornstarch
2 pcs. slighty beaten eggs
Japanese breadcrumbs
Tonkatsu sauce






Step 1: Wash the porkchops first, then dry it well using paper towel, sprinkle some salt and paper

Step 2: And then, coat it with a flour or cornstarch, then dip it on a beaten eggs and then on a japanese          breadcrumbs

Step 3: Fry until golden brown. serve while still hot with tonkatsu sauce on the side
             makes 2-4 servings

"Kath" is ~ In The Kitchen ~


If you're one of my FB Friends, you're familiar with my photo album named Entrepreneur by Profession ~ Cook and Baker by PASSION :D i created about a week ago. Pictures of the foods i cooked and some of my favorite foodies :-)

I learned how to cook because of my Grand Mother. She told me she was a cook of a Spanish family before. from Special Caldereta, to basic Sinigang to Kare-Kare and a lot more, name it and she knows how to cook it. Every time she was cooking, I will crab a pen and paper and did a lil interview thing and was able to write down the step-by-step procedures of how to cook that certain dish.

I'm NOT claiming that my recipes are the best among the rest, but at least, in one way or another, i was able to share it with you those foods that i love and if ever there will be a chance that you, the one reading it right now, follow my recipes and found out it was good enough, a little "Thank You" will make this "little chef" smile and happy :-)

And now, I guess its time to finally show my passion for cooking and baking by sharing with you those recipes i learned from my Lola, from my Alma Matter, those i learned from my mom also, and by watching my favorite cooking shows with of course, the recipes hunting on the net ;-P

Blog Marathon #4 " The Lost Puppy "


Jonathan (my fiancé) and I love puppies! I remember he gave me a puppies as a friendship gift when we're still BBF :-) i even called them "Bochog" and "Bochay" but sadly, they died after a few months :'(

Anyway, we wanted to have a dog in the house but we're still waiting for JingJing's puppies to grow up. (JingJing is his mother's one and only dog) But last January 28, we found a puppy!

We're on a store chatting with some of our friends when suddenly a brown puppy just came in and we notice that he is so hungry so we gave him something to eat. There's a lot of people walking on the streets after attending the "barangay sortie" of a certain political group (will blog about it later) so at first we really wanted to ask around who the owner was because maybe isa sa mga nanood yung may-ari and naiwanan lang or something.

But one of our friend said he can take care of him and he went home with the lost puppy. and what a surprise! after a few minutes, the puppy is running back to us and make papansin to Mahal Ko :-) So okay, we adopted him and gave him a lil space on our house. After making a make-shift bed for him, we decided to give him a name. I wanted "Bumblebee" or "Optimus" but Mahal Ko wanted "GUMP" yes, Gump as in the movie Forrest Gump.

Blog Marathon #3 " Cancellation of my supposed Baking and Culinary Class :( "


I was so happy blogging about Me taking Culinary and Baking classes soon here But as you can see, it didn't push through because i have to go to Hospital, finish the lab tests and went to a follow-up check-ups. You can read the story here.

At first i was so sad because I'm already preparing myself for the start of my classes but because of the problem regarding my health, I have to cancel my enrollment. But the good thing is, I can enroll for their April session! so I am back on a Happy Mode :-)

I was thinking to take their basic first which will last for 3 months, then advance Culinary and Baking for 6 months. I guess 2010 will be a very busy busy year for me.

Blog Marathon #2 " The Doctor is IN "



I thought I'm still as healthy as I am before. I guess, i was so wrong. Around last week of January, i notice i felt a lot of pains. From headaches, chest pains, painful urination, and  even my sprained ankle years ago keep hurting and i don't why. So i decided to visit my doctor in DLSUMC . But sadly, she wasn't there so i had to go back and check the nearest Hospital.

Dra. Wilma Galope is "IN" :-) I gave my urine sample to their lab for Urinalysis, i waited for few minutes and the result is done. I found out i have UTI (as i suspected). My doctor prescribe Ciprofloxacin 500mg an antibiotic to help wash away the bacteria causing UTI. I also ask if can i have FBS and my Dra. agreed. So after the 6hrs./overnight fasting, took the FBS testing. Good thing the result said i have a normal blood sugar with only 60-80 mg/dl. Thank goodness because all along i thought I'm diabetic because of my weight. However, she said i should manage my eating habits well because i am prone to High Blood! OMG! i really need to diet seriously this time.

Then she also prescribe Metformin500mg because she said it may help to prevent me from having any type of diabetes and also Metmorfin helps restore menstruation cycle since I'm having irregular cycles since college days. She also manage to check my chest pains and my old-sprained ankle and said may naipit lang na veins. also my headache is cause by my eyes naman oh well, that's another story.

Well, so far so good, I'm still healthy i think. Although like what Dra. Galope said, i should take a lot of care with what I'm eating this time because its a start of more serious complications having bad eating habits without exercise.

Tips i learned from her, if i can't help eating, have a fruits like banana and apple, yogurts and peanuts plus lots of lots of H2O with me with matching vitamins once in awhile is good. And the right exercise is not 30mins. not 1hour either but TWO HOURS! put them all together and that will keep doctors away! :-)

Blog Marathon #1 " My brother's 27 Birthday "


As Promise, here's "what-have-me" for the fast few days of January. This is my so called "Blogging Marathon" and Let's start with my kuya.

 Last January 24, Kuya Jeng celebrates his 27th Big Day.. We had a very simple celebration and my father together with his son Justin and daughter Mariel came to celebrate with us too :-)

I just can't believe 27 na sya, grabe! parang kelan lang, bug-bugan to the max pa kami nun! And do you know that 9 months after, it's my turn to celebrate my very own "late-20s" yikes! Well, although its a bit over-due post, still, i want him to have this page. After all, he's my one and only "Big Brother".

 Although sometimes we had so much misunderstanding, still, i Love him together with his family so much that i will do everything to protect and care them always....

Back to School


Yup! you read it right. Me. Back to school again.

It's always been my dream to become a chef.

Being an HRM student before, i had a chance to cook and bake but just the basic since my course concentrating more on management thingy :-) This time, i really want to become a real pro chef mastering the pastry world :-) but enrolling to a well-know culinary schools like CCA, ISCAHM, CACS, and HENYSISON is out for the moment. Since budget constrains :-)

I don't have a guts for now to enroll to the said culinary schools because it means i should shell-out P300,000++ for non-pro certificates to a whooping P1M enrollment fees! excluded pocket damages for special projects and finals.

Maybe in the future i can. haha! asa pa! but who knows right? ( fingers cross ;D ) For now, i am settled to a small cooking and baking class here in the south. And my class will start very soon. So excited!

On this day, God wants Me to know...


This is one of FB's Apps that i super like. I don't know but every time i click On This Day, the advices is always true for me because i can relate actually. Just like today, when i click it, here's God's advice to me....


... that it is time to finally forgive yourself. You've carried the guilt, the shame for long enough. You've kept your wounds open for long enough. The time has to come to let go, to heal. Keep the lessons and let the pain heal. Yes, you know what we are talking about it.


Upon reading it, i almost cry without any reason at all. Maybe I'm just so EMO (emotional) and so touch because every word is soooo true! as if, that apps really knows who am I and what am I going through as in!

Keep thinking or Let it Go?


I don't know what to do right now. for some, it's a simple problem and maybe it's easy for them to just shrug it off. but for me, money is money whether small or big amount, money pa din yan eh. Kakainis kasi. as in gggrrr... I want to rant all night long actually but I'm too tired to do so *sigh*

If i ask you right now, what will you do if you lost a Y 10,000 Yen = P4,950 today? and you didn't know if you really lost it around the street because the money is in your pocket, or somebody stole it from the place you last hide it? what if you search half day just to find it then you realize it's a hopeless case? would you keep thinking about it or you'll let it go?

Actually, I'm at my store that time, i have to go to my granny's house a few steps away from my store, more like 50 steps lang ata. then when i came back to check the money, it's gone. some of my cousins told me maybe i put it in my pocket while going to my lola's house then i lost it while walking. but that's impossible! i know i put it to one of my drawers and there's only a few people outside my store that time so there's a possibility na they can see who's gonna pick-up that white envelop. Oh well, maybe i should let it go na. So sad lang because if ever someone might saw that money (and I'm sure kakilala ko yung pwede makakuha) but never bother to return it, it's only means that sometimes, when it comes to money matters, some people tend to be greedy....

But just like what my w@wie-sis said, believe in "K" (Karma) Magic! and for sure, what I've lost today, sooner or later will return 100folds pa :-)

My first glimpse of Harry Potter and The Deathly Hallows

I'm a self-confessed HP fan, read all HP series again and again especially this particular book. And the HP movies is awesome (although some vital parts is missing ;-P ) still, HP is the best!

So, here's Harry Potter and the Deathly Hallows' movie trailer i found in YouTube. But again, I'm a bit disappointed because in the trailer, Ollivander told Harry about the Deathly Hallows but in the book, it's all about the Elder Wand he narrated, Harry ask Ollivander about DH but he had no idea whatsoever about it so Harry let him rest. Oh well, never mind me. I can't wait for November....

Happy 56th Mahal Ko!

My 1st Sunday Mass


I attended and hear my very first Sunday Mass for 2010. Our parish priest's homily is about our mission as a truly disciples of our Lord. He said we should really pay attention to what God really wants us to do and do it, do it now. Not the day after tomorrow but today. A mission that design by God especially for us is just right in front of us but we we're just too busy for so many things that we intentionaly neglect it and never really care.

I once read The Purpose Driven Life and somehow, it helps me a lot. and I agree with Fr. and that's what i intended to do this new year. I want to know my own mission and hopefully, i will find it so that finally, i will fully understand why on Earth I am here for....

The Epiphany of the Lord (Finding the Finder!)

These “Wise Men” also represent the former ways of thinking, wondering, and philosophizing. They come in a sign of surrender to this new “epiphany” or display of this “One God” Who is for all and is now known as the God Who does the seeking and the finding.

The gifts which the Magi present represent what is valuable to these seekers who leave them at the “house” and leave by “another way”. They have not so much found as they have been found and leave that place to begin spreading the news of the Finder they found. This is all a grand ending and beginning.

Laundry makes me tired :(


Yeah, i am so tired making my laundry today. Imagine for 1 whole week, i wasn't able to clean my clothes because of Holiday-thingy :) well, tambak ang aking labahan ngayon and while i'm writing this, im happy to announce that i'm almost done! yehey!

But i wish i own this kind of washing machine from Samsung so that my laundry day is so much easier.


but this kind of techie washing machine will cost more or less P37,000++ hhmm... i think i will stick with my old Sharp Semi-Automatic W.M. for a while :) but if i really, really want a full-auto W.M. i will go with this one from LG

i Kiss 2009 Goodbye

 

Kissing 2009 one last time. as i Welcome 2010 with open arms.

 

2009 has been a good year for me. Got small yet successful business, catch-up with old friends that i really miss for years (and met new ones) still BIG yet still healthy :D MAHAL Ko and I celebrates our 5th New Year already and my parents reconciled after 10 long years!

Welcome to My On-Line Diary.

This is my nth blog actually but promise i'll keep this one updated. I'm still learning my way around here and im not claiming im good at writing so bear with me if im so clumsy making the right words or my english grammar is not that good. I might as well use my own language once in awhile since I'M a PROUD FILIPINO! (FYI im a frustrated chef not a diplomat :) haha!)

I'll be writing down anything and everything under the sun, my long time dreams and goals, my rants and raves, and the latest, exciting, memorable and sometimes boring happenings in my humble life. Me being shopaholic, food lover, bookish, frustrated chef, future pâtissier, movie-maniac, net surfer, FB addict and as a daughter, a sibling, a friend, an entrepreneur, a loving yet stubborn lover, a soon-to-be blushing bride, a future wife and mom or just about being Me.

Sharing my thoughts about my everyday life here in cyberspace is a good way to go for there will be a time that old age will catch-up with me but with this blog, i can read and just look back to the memories all over again in just one click about my life way back then and reminisce the good all "what, where and when" and feel happily nostalgic.
