Delightful Carbonara topped with slice ham and bacon bits ~Recipes #2~


Carbonara (usually spaghetti, but also fettuccine, rigatoni or bucatini) is an Italian pasta dish based on eggs, pecorino romano, guanciale, and black pepper. The dish was created in the middle of the 20th century.

I love pasta! and i love its different sauces too! from Alfredo, to Meatballs, to Pesto, and the seafoods :-) I first tasted Carbonara during High School days at Sbarro Festival Mall in Alabang. Its not my fave pasta dish but since its the easiest to prepare, i give it a try. However, my Carbonara doesn't have eggs.  It was a combination of different recipes i learned from the net.



Ingredients

500 grams.     Spaghetti or Fettuccine Pasta
                          (with this recipe i used the latter)
                          I'm using San Remo for my pasta dishes
200 grams      bacon
200 grams      cooked ham
½ cup              butter
1 tsp                 dried basil leaves
½ tsp               dried rosemary
1 pc                   chicken bouillon cube
1 small can      of slice mushrooms
2 cups              of heavy cream (you can use Nestle all-purpose cream)
1 cup                cream of mushroom (the best is Campbell )
1 cup                water
½ cup              quickmelt cheese, grated
                         Parmesan cheese
                         Salt and Pepper to taste


Cooking Procedures

Cook the spaghetti or fettuccine according to package directions. Drain and you can rinse in cold or running water. Transfer to a serving bowl

Step 1: Cook bacon in a skillet over medium-high heat without oil. When the bacon starts to render oil, turn up the heat to high and continue cooking until the edges start to brown (you can cook until crisp). Pour off the bacon fat. When the bacon is cooled, scrumble it into bits of pieces

Step 2: In the same pan, cook the ham for about 1 minute on both sides at medium fire. Set aside. When already cooled, slice it accodring to your preperence.

Step 3: In the same pan, put the butter until melted and add the mushrooms, ham, basil, rosemary. Add the water from the mushroom and bouillon cubes. Add the cream and let it simmer while stirring occasionally. Add the cream of mushroom, water, cheese, and bacon. Add more water until you achieve the desired consistency. Add salt and pepper to taste and stir a lil bit more.

Step 4: Toss with the pasta and sprinkle with lots of Parmesan cheese.

                makes 6 servings


COOKING TIPS!  Please note that before you add some pepper and salt, make sure you already tasted your sauce because the bacon and ham already has a salty flavor.


 You can serve it plain just like this


 


Or with lots of Parmesan Cheese!

Tonkatsu ala KC ~Recipes #1~


Tonkatsu is a very popular Japanese food. According to Wikipedia, it was invented in the late 19th century. It consists of a breaded, deep-fried pork cutlet one to two centimeters thick and sliced into bite-sized pieces, generally served with shredded cabbage and/or miso soup. Either a pork fillet (ヒレ, hire) or pork loin (ロース, rōsu) cut may be used; the meat is usually salted, peppered, dredged lightly in flour, dipped into beaten egg and then coated with panko (breadcrumbs) before being deep fried.

My mom is living and working in the land of the rising sun for almost 24 years already. Every time she comes home, there's always a pasalubong that includes Japanese foods that's why one of my fave dishes is Japanese and Tonkatsu is my 2nd Japanese fave food (Tempura being #1 :-D)


This recipe was posted on my former blog that i deleted already but you can still read the original post to my multiply account.

Here's my very own version of TONKATSU. Itadakimas!


Ingredients:

1 or 1/2 kilo boneless pork chop
salt and pepper to taste
flour/cornstarch
2 pcs. slighty beaten eggs
Japanese breadcrumbs
Tonkatsu sauce






Step 1: Wash the porkchops first, then dry it well using paper towel, sprinkle some salt and paper

Step 2: And then, coat it with a flour or cornstarch, then dip it on a beaten eggs and then on a japanese          breadcrumbs

Step 3: Fry until golden brown. serve while still hot with tonkatsu sauce on the side
             makes 2-4 servings

"Kath" is ~ In The Kitchen ~


If you're one of my FB Friends, you're familiar with my photo album named Entrepreneur by Profession ~ Cook and Baker by PASSION :D i created about a week ago. Pictures of the foods i cooked and some of my favorite foodies :-)

I learned how to cook because of my Grand Mother. She told me she was a cook of a Spanish family before. from Special Caldereta, to basic Sinigang to Kare-Kare and a lot more, name it and she knows how to cook it. Every time she was cooking, I will crab a pen and paper and did a lil interview thing and was able to write down the step-by-step procedures of how to cook that certain dish.

I'm NOT claiming that my recipes are the best among the rest, but at least, in one way or another, i was able to share it with you those foods that i love and if ever there will be a chance that you, the one reading it right now, follow my recipes and found out it was good enough, a little "Thank You" will make this "little chef" smile and happy :-)

And now, I guess its time to finally show my passion for cooking and baking by sharing with you those recipes i learned from my Lola, from my Alma Matter, those i learned from my mom also, and by watching my favorite cooking shows with of course, the recipes hunting on the net ;-P

Blog Marathon #4 " The Lost Puppy "


Jonathan (my fiancé) and I love puppies! I remember he gave me a puppies as a friendship gift when we're still BBF :-) i even called them "Bochog" and "Bochay" but sadly, they died after a few months :'(

Anyway, we wanted to have a dog in the house but we're still waiting for JingJing's puppies to grow up. (JingJing is his mother's one and only dog) But last January 28, we found a puppy!

We're on a store chatting with some of our friends when suddenly a brown puppy just came in and we notice that he is so hungry so we gave him something to eat. There's a lot of people walking on the streets after attending the "barangay sortie" of a certain political group (will blog about it later) so at first we really wanted to ask around who the owner was because maybe isa sa mga nanood yung may-ari and naiwanan lang or something.

But one of our friend said he can take care of him and he went home with the lost puppy. and what a surprise! after a few minutes, the puppy is running back to us and make papansin to Mahal Ko :-) So okay, we adopted him and gave him a lil space on our house. After making a make-shift bed for him, we decided to give him a name. I wanted "Bumblebee" or "Optimus" but Mahal Ko wanted "GUMP" yes, Gump as in the movie Forrest Gump.

Blog Marathon #3 " Cancellation of my supposed Baking and Culinary Class :( "


I was so happy blogging about Me taking Culinary and Baking classes soon here But as you can see, it didn't push through because i have to go to Hospital, finish the lab tests and went to a follow-up check-ups. You can read the story here.

At first i was so sad because I'm already preparing myself for the start of my classes but because of the problem regarding my health, I have to cancel my enrollment. But the good thing is, I can enroll for their April session! so I am back on a Happy Mode :-)

I was thinking to take their basic first which will last for 3 months, then advance Culinary and Baking for 6 months. I guess 2010 will be a very busy busy year for me.

Blog Marathon #2 " The Doctor is IN "



I thought I'm still as healthy as I am before. I guess, i was so wrong. Around last week of January, i notice i felt a lot of pains. From headaches, chest pains, painful urination, and  even my sprained ankle years ago keep hurting and i don't why. So i decided to visit my doctor in DLSUMC . But sadly, she wasn't there so i had to go back and check the nearest Hospital.

Dra. Wilma Galope is "IN" :-) I gave my urine sample to their lab for Urinalysis, i waited for few minutes and the result is done. I found out i have UTI (as i suspected). My doctor prescribe Ciprofloxacin 500mg an antibiotic to help wash away the bacteria causing UTI. I also ask if can i have FBS and my Dra. agreed. So after the 6hrs./overnight fasting, took the FBS testing. Good thing the result said i have a normal blood sugar with only 60-80 mg/dl. Thank goodness because all along i thought I'm diabetic because of my weight. However, she said i should manage my eating habits well because i am prone to High Blood! OMG! i really need to diet seriously this time.

Then she also prescribe Metformin500mg because she said it may help to prevent me from having any type of diabetes and also Metmorfin helps restore menstruation cycle since I'm having irregular cycles since college days. She also manage to check my chest pains and my old-sprained ankle and said may naipit lang na veins. also my headache is cause by my eyes naman oh well, that's another story.

Well, so far so good, I'm still healthy i think. Although like what Dra. Galope said, i should take a lot of care with what I'm eating this time because its a start of more serious complications having bad eating habits without exercise.

Tips i learned from her, if i can't help eating, have a fruits like banana and apple, yogurts and peanuts plus lots of lots of H2O with me with matching vitamins once in awhile is good. And the right exercise is not 30mins. not 1hour either but TWO HOURS! put them all together and that will keep doctors away! :-)

Blog Marathon #1 " My brother's 27 Birthday "


As Promise, here's "what-have-me" for the fast few days of January. This is my so called "Blogging Marathon" and Let's start with my kuya.

 Last January 24, Kuya Jeng celebrates his 27th Big Day.. We had a very simple celebration and my father together with his son Justin and daughter Mariel came to celebrate with us too :-)

I just can't believe 27 na sya, grabe! parang kelan lang, bug-bugan to the max pa kami nun! And do you know that 9 months after, it's my turn to celebrate my very own "late-20s" yikes! Well, although its a bit over-due post, still, i want him to have this page. After all, he's my one and only "Big Brother".

 Although sometimes we had so much misunderstanding, still, i Love him together with his family so much that i will do everything to protect and care them always....
